Our dry aged, bone-in New York Strip brings together tenderness and flavor perfectly. This cut was originally known as the Kansas City Strip Steak. Historically, slaughterhouses in Kansas City left the bone attached to their strip steaks. But in the 1930's, restaurants in New York City decided that selling a steak named after Kansas City wasn't fancy enough, so they renamed it and took the bone out. Whatever you call it, this steak is full of flavor. Like all our beef, our strips are dry aged, creating an incredibly flavorful cut.
